Chicken Curry with Rice
All meals are made fresh daily, on site, by our 2IC centre cook, Miss Shanny.
When we think curry, we think hot and spicy. This recipe is super mild, that even the kids will ask for seconds.
- 500g Chicken Mince
- 1 tin organic Coconut Cream. (Best brand is Ayam).
- 200g Butternut Pumpkin, cubed
- one onion
- one cup Mixed Vegetables
- 1 Tbsp Curry Powder
Cook chicken mince and onion until browned.
Add all other ingredients and stir through thoroughly.
Simmer for 15 minutes.
Serve with Rice
